Cooking Diary: Oh, Fishsticks
I'm not dead, I swear! I feel like I've been running around all week, so that doesn't leave a lot of time to posts on Dreamwidth. I've also been doing a lot of cooking this week and have some pictures to show for it.

Fishsticks w/ Sauce. I think they turned out pretty well. The panko was a really good breading to use - it was light and crispy without being tough. I think if I make this again I would cook them a couple minutes less, as they turned out a *tad* chewy, which freaks me out when seafood is involved. The sauce was delicious and I highly recommend it.

Corn salad. Oh my god, this was delicious. It's funny, when I first tasted it, i wasn't too wowed, but sure enough, I began to crave it. I pretty much only ate this for the next three days. (I kind of had to, despite it being yummy, because neither my mom or my brother like really strong flavors, which this has in spades.) Overall, I really loved this recipe. Light but flavorable and fresh and actually good for you. It's pretty much the definition of om nom nom.

Strawberry pie. I'm cheating including this on the menu, since I made it the day after I made the fishsticks, but it was too good not to post. Seriously, this one turned out amazing. I haven't made a pie in a really long time, so I was nervous about how it would turn out, but it was really frickin good. The recipe is super easy and fast, so there's no reason *not* to make this pie, unless you're a terrible person who hates strawberries. Even my mom loved it, and she's a hard person to please when it comes to desserts.
Okay, technically I didn't make the chicken salad until the day after I made the pie, but it turned out well. My favorite part of making it was poaching the chicken. I added wine, garlic, and onions sauteed in butter to the water, and it smelled so incredibly delicious. Like, I've never smelled anything better coming out of our kitchen. Once I added the chicken, it got even better, and it trailed through the whole house. *drool* Just a great olfactory moment.
