Monday was Memorial Day, and for my family Memorial Day = awkward cook out. I frickin' love cook outs. I love the drama of choosing between a hamburger and a hot dog. I love planning which salads (out of the 20 billion varieties that abound in the Midwest) are going to be made. I love that there is a very big chance that flavored lemonade is available. So, yeah, I'm a cook out fiend. I really want to learn how to grill this summer so when the time comes for me to host my own cook out, I will be so ready. Since I can't grill yet, I couldn't contribute any meat, so I decided to do dessert. Because this was actually a holiday, I decided to aim big, and so I spent most of the day making Boston Cream Pie Cupcakes.
They turned out pretty darn good, if I do say so myself. The only thing with this recipe is that they do require a lot of time to make. First you have to do the cream filling, which takes at least a half an hour, then the cupcakes themselves (which takes 45 min to an hour), then make the ganache and assemble all of them which is kind of a pain in the butt. Overall, I think they're worth it. I would definitely make them again. Although probably more for myself than for my lame family, which apparently doesn't like dessert. Seriously, I think me and my mom are the only ones who appreciate it. My brother snarfs his food down and runs off to his lair as soon as he can while my dad doesn't eat any of my desserts until way after the fact. He didn't try one of these babies until last night. I guess I don't care that much because that means more delicious food for me, but I wish they would appreciate it a little more, y'know? My family can be kind of oblivious about things that don't come prepackaged from Krogers.
